Salmon Casserole

I use Cheddar Cheese for this recipe as I'm not a big fan of Swiss. It turns out well to my taste buds!

Salmon Casserole
2 cups mashed potatoes
1/2 cup grated Swiss Cheese
1 egg yolk
1 cup medium white sauce
15 1/2 oz. salmon
buttered bread crumbs

Line a greased baking dish with mashed potatoes. Add cheese and egg yolk to white sauce and pour 1/2 of it over potatoes. Drain and bone salmon. Flake fish and add over potatoes pouring the remaining sauce on top. Sprinkle bread crumbs over mixture. Bake at 350 degrees for 20 minutes.
