Chocolate Oatmeal Cake

This is moist and delicious. You need to try it once!


1 1/2 cups boiling water
1 cup rolled oats
2/3 cups butter
1 1/2 cups sugar or Sucanat
2 eggs, slightly beaten
1 tsp baking soda
1 tsp cream of tarter
1/3 cup baking cocoa
1 1/3 cups whole wheat flour

Topping:
1/2 sugar or Sucanat
1/4 cup butter
1/4 cup milk
1 cup unsweetened coconut
2/3 cup chocolate chips
1 cup chopped nuts (optional)

Preheat over to 350 degrees. In a large bowl combine water, oats, and butter then let it sit for 20 minutes. Add remaining ingredients and stir until just mixed. Pour into lightly greased 13x9 pan and bake 30 minutes.

Combine topping ingredients in a small saucepan and heat over very low heat until melted. Spread topping over hot cake. Return cake to oven and broil until top is bubbly. Topping will harden a bit while cake cools.
