This is my favorite sweet potato casserole. I really can't bear the sweet potatoes casseroles so soaked in sugar and marshmallows that it's hard to tell you are eating sweet potato too! To me this has the perfect blend of sweet potato and sweetness without being a dessert.
Baked Sweet Potato Casserole
6-8 cups mashed sweet potatoes
1/4 cup softened butter
1 cup honey
1 Tb vanilla
1/2 tsp salt
dash cinnamon
2 eggs
Blend all together until smooth. Bake in a 9x13 pan for 35 minutes.
