This is one of my favorite meat loafs! I'm not a meat loaf fan by nature. Most of the meat loafs I had at other people's homes or eating out as I was growing up were just plain gross. Then when I was learning to cook my Mom had to encourage me to stick my hands in the gooey raw egg mixture. That did me in right there. I was convinced when I had my own home we would be meat loaf free. Behold, I share a meat loaf recipe! My Mom found this recipe before I got married. Somehow, it made it's way into my very own kitchen. Could be it taste so good I put up with the distasteful mixing with my own hands part. Could be...you'll have to try it to find out.
1 1/2 pounds lean ground beef
1/2 cup crushed crackers
1/2 cup milk
1 small yellow onion, finely chopped
1/3 cup chopped fresh mushrooms or green peppers
2 TB minced parsley
1/2 tsp salt
1/2 tsp ground sage
1/4 tsp black pepper
2 large egg whites, lightly beaten
1/3 cup brown sugar
1 TB lemon juice
1 1/2 tsp Dijon mustard OR 1/2 tsp dry mustard
Preheat the oven to 350. In a large bowl, mix the ground beef, crackers, milk, onion, mushrooms, parsley, salt, sage, black pepper, and egg whites. Shape the meat mixture and place in a 8x4 loaf pan. Smooth the top. Bake for 1 hour 14 minutes or until a thermometer inserted in the center registers 170. In a small bowl, combine the brown sugar, lemon juice, and mustard. Spread over meat loaf. Bake for 10 minutes more.
