Creamed Spinach

It's been awhile since I have used this recipe. If you could see my very full recipe box, you would know why. I'm trying to rotate more, instead of using the same old thing so often. I have a large variety of recipes! I do remember this recipe being quite yummy over salmon patties.

3/4 cup milk
2Tb powdered milk
1/2 small onion
1 to 3 TB butter
3 TB whole wheat flour
3 quarts fresh spinach, washed, drained, and chopped (3 small bunches)
1/4 tsp salt
pinch nutmeg
2 Tb Parmesan Cheese
Blend milks together and set aside. Chop onion finely and saute in butter in skillet.
When the onion is clear, stir in the flour. Cook and stir gently for 2 minutes. Don't let the flour brown. Add the milk and bring to a boil stirring. Stir in the spinach a handful at a time, adding more as the spinach cooks. Simmer gently until tender, seasoning with salt and nutmeg. Add cheese. Makes 3 cups. Serves 4 to 6. Serve over potatoes, noodles, salmon patties, or rice.
