Chicken & Brown Rice Pilaf

1 Tb oil
1 lb. (4 small) boneless skinless chicken breast
1 can (10 1/2 oz) chicken broth
1/2 cup water
2 cups quick Brown Rice, uncooked
1 cup fresh mushrooms, sliced
1 small onion, chopped
1 cup frozen peas

Heat oil in large skillet on medium high heat. Add chicken; cover. Cook 4 minutes on each side or until chicken is cooked. Remove chicken from skillet; cover to keep warm. Add chicken broth and water to skillet; bring to boil. Stir in rice, mushrooms, onions, and peas. Top with chicken and cover. Reduce heat to medium low and cook 5 minutes. Remove from heat and let stand 5 minutes.
